Orzo Pasta Salad

 

Ingredients:

 

*     1 lb. box Orzo Pasta

*     1 can small white, northern or garbanzo beans

*     1/2 cup chopped kalmata olives

*     1/2 cup diced red/yellow/orange bell peppers

*     8 oz. feta cheese, crumbled

*     1/2 cup chopped fresh basil (or to taste)

*     1/2 cup balsalmic vinegar

*     1/4 cup olive oil

*     pinch salt

*     white pepper or paprika or red pepper flakes per your taste

 

Directions:

 

Cook pasta to package directions, rinse under cold water, drain well. Add beans, olives, bell peppers, feta and basil and mix well. Mix together vinegar, oil and seasoning, then pour over salad mixture and toss well. Chill 2+ hours for best flavor.
